In 2015, Christine Byrne went on Meredith Vieira’s daytime talk show and layered an entire Thanksgiving dinner — mashed potatoes, sweet potatoes, green bean casserole, turkey, cranberry sauce, stuffing, and gravy — in a two-gallon bucket, like a savory parfait. The hosts were horrified. Now, she runs a group nutrition practice in Raleigh specializing in eating disorder recovery, writes the occasional freelance food article, and tries to be a good role model for her dog, Peanut (who would have loved the Thanksgiving bucket).
